Sometimes. A simple freestanding grill station on an existing patio usually doesn't need a permit. But once you add a permanent countertop structure, run a gas line, install plumbing for a sink, or wire electrical for lighting and outlets, permits are typically required for each trade involved. A roofed outdoor kitchen is treated as a structure and triggers building permits in most jurisdictions.

What triggers a permit

Country-specific detail

In Poland, a freestanding outdoor kitchen without a roof on an existing terrace generally doesn't require a permit. However, adding a permanent roofed structure (wiata or altana) may fall under Art. 29 of Prawo Budowlane: structures up to 35 m² may need only a notification (zgłoszenie), while larger ones require a building permit. Gas installation work requires a qualified gas fitter with appropriate uprawnienia, and the gas system must pass a pressure test. Electrical work must be performed by a certified electrician. Plumbing connections require compliance with sanitary standards, particularly drainage that may need connection to the municipal sewer or a septic system.
